I made this for dinner tonight and it went over VERY well. So, of course I have to share. It is incredibly easy and a really good way to get your child(ren) and husband to eat their vegetables. I heard no complaints and my husband may or may not have had 'seconds' but 'thirds'.
So here goes!
Ingredients:
-1 lb. ground beef
-1 large can of cream of mushroom soup
-1 can of green beans
-2 cans of mixed vegetables {Whatever kind you like -- basically you can use a total of 3 cans of whatever veggies you like, the above are just what I used}
-Shredded cheddar cheese
-Frozen hashbrowns or tater tots
-Salt and pepper
Directions:
Cook your ground beef & drain the grease. In a large bowl mix your ground beef with your canned veggies along with your large can of cream of mushroom soup. Pour into a greased 9x13 casserole dish. Cover with shredded cheese and then top off with a generous layer of your frozen potatoes {I went with the hashbrown option and used just over half of the bag. I think it was a good choice! But, I'm sure tater tots would work great too!} Salt and pepper on top of the potatoes {optional}
Bake in the oven at 350 degrees uncovered for about 35-40 minutes {or until your potatoes are golden brown and you can see the mixture below bubbling}
Let it cool for 10 minutes and serve that stuff up. And don't forget to enjoy. ;)

We enjoyed it and will enjoy the leftovers tomorrow for lunch.
I am totally at the point now too, where basically anytime I can get my toddler to eat it's a small victory.
